You have a lot of questions. I will try to cover them all.

First, mice can fit through a hole the size of a dime.
Second, unlike rats, mice are very small; it would take a major infestation to generate a persistent odor as indicated.

Elimination starts by sealing the exterior foundation of the home, door sweeps, broken windows, cracks in the foundation, holes around electrical service, water faucets and dryer vents.

Secondly, food sources must be eliminated. Mice only need 1 gram of food a day and they extract water directly from the food they digest.

Next, mice infestations are more localized than people think, bait under the house might not have any effect. Heat sources like refrigerators and hot water heaters are suspect as a base of operation.

Snap traps are highly effective when used where dropping are found. Use a variety of bait, peanut butter (avoid this if children are present), brownie, fruit and even dental floss tied to the pedal (nesting material).

As for the odor, look for an enzyme based cleaner / deodorizer.

The quickest way I've found to get rid of them (as opposed to preventing them - see answer above) is to put a half cup of cider vinegar (must be cider vinegar) in a jar or bowl and put a half-dozen drops of dishwashing liquid on top of it.  Leave out on a counter wherever the problem exists. Empty and refill as needed.
Legally, it needs to be pest control - wildly boring technical explanation regarding Federal pesticide laws that I won't bother you with.  Having said that, depending on where they are located in your chimnet, you could do it yourselt.  Most wasp control products will shoot 12'-20'.  So, if they are in a lower section of your chimney you wait until dark (they return to their nests before dark) and reach up above your damper and spray the nests.  If you're not averse to being on your roof, do the same thing from the top.  Otherwise, hire a professional.
An exterminator - you have to careful that the pests are driven out of the attic BEFORE the entrance they were using is closed up, otherwise you have dead decaying animals in your attic - can cause a stench that lasts for weeks.

knocked on my door a few years ago promising same level of pest control as the current company at that time, for less money. I was in a cost-saving mode at that time so I listened to their pitch and it mostly sounded pretty good. They wanted to sell me a two-year contract - I specifically asked for a 1-year as I didn't want to be on the hook for two years. So, I thought I was getting both pest and mosquito control for a 1-year contract at a better cost.
All was OK for the first few treatments the first year. The back half of the first year, I started running into issues with scheduling - I needed first thing in the morning. They kept scheduling for afternoon and if I wasn't there - they treated the outside of the house only - for the same rate as inside/outside. I also noticed more and more mosquitoes meaning whatever they used for mosquito control was not working. At the end of the first year, I started to seriously consider leaving Eco and it was at that time I discovered that the contract I signed was for two years - not one year. That was definitely my fault for not reading the contract the year prior - that will never happen again for sure.
The 2nd year I kept having issues with scheduling...finally got that ironed out several months ago. In the meantime I'm noticing that my service is getting more and more minimal. When I asked the tech about dusting the attic for scorpions (as it was about that time), he flatly stated that

? How can a pest company not service attics? Finally, the most recent service (which was actually properly scheduled for the first time in ages) the tech serviced just the outside of the house. I was home for this service and asked him about the inside of the house. He stated that the only the outside needed to be treated, but if I noticed any bugs inside the house, then to call back for a fill-in service. i was in a hurry so I didn't fight him on it but I should have challenged him as within 4 weeks I saw bugs. For the first time ever -in the thirteen years I've been in the house - I saw crickets in my shower. The final straw however was a massive roach that dropped on my foot off my my sponge in that same shower. I almost slipped and fell trying to get away from the ginormous bug. Falling in a wet shower could have been really bad so I finally hit my limit and decided to go back to my previous pest company. I'm tired of paying the same amount for diminishing service and indifferent techs...and for the frustration of a 2 year contract when I clearly stated I wanted a one-year...and of course the frustration over scheduling as well.
When I called to cancel my service, the young lady I spoke to was very nice and empathetic, and tried her best to get me to stay with

Net, I walked away from half price service which definitely would save me money, but I've discovered that I most definitely want the peace of mind of knowing my home is bug-free over that savings. I also wanted my previous tech back who always made sure all bugs were dealt with in an efficient manner...not just telling me to contact him if I see 'em.

does have some caring folks who want to do the right thing, but they seem to have more folks who want to take the path of least resistance...and charge the same amount for minimal service. I'm glad to be done with the contract and to be going back to HomeTeam where I know they will treat my entire home and attic, and at the same rate as what I had 2 years ago.
