There's a learning curve, Macdonald says, when using a ceramic grill as opposed to a charcoal model. "I've made some pretty good dishes and I've screwed up a few things," Macdonald says. "With a charcoal grill, you can't cook something for a long time because the charcoal burns out fast. Ceramic grills cook very slowly, so if you want to smoke pork so it gets tender and juicy, you can keep the temperature exactly where you want it for several hours."
Gerald Macdonald says he first learned of ceramic grills at a home show. "I thought they were cool and was intrigued by them, so I started doing research on cooking with them," Macdonald says.
